I was at a doctors appointment up at Yonge and Eglinton with no where to go for lunch. So while waiting for said appointment I whipped out my trusty blackberry and began searching. I finally came across a little French cafe at Mt. Pleasant Rd. and Manor Rd. E. (Just south of Eglinton Ave. E.) called Thobors Boulangerie Patisserie Cafe (I have a soft spot for little french macarons, so this was the basis of my search). The cafe is adorable but small, and the lunch crowd in this ritzy area apparently likes the joint, so my friend and I were lucky to get a seat! Now French food isn’t exactly known as vegetarian friendly, but I had done my research, and they did have one particular sandwich that I now make at home on quite a regular basis… too often actually. So here it is! Super simple, and super quick!
- 1 French Stick
- Brie, sliced
- Tomato, sliced
- 1 Avocado, sliced
- Cut the french stick into four pieces, and then cut each piece in half lengthwise. I used a smaller french stick, so if you’re using a larger one just cut enough for two sandwiches.
- Place slices of brie on one side of the french stick and pile on slices of tomato and avocado and serve! That’s it!
- Use any leftover Avocado sliced on the side with a bit of lemon juice.
(Makes 2 sandwiches)
